Spice Roasted Cornish Hens Recipe

Ingredients :
- 3 frozen Cornish game hens, thawed
- 3 tbsp honey
- 2 tbsp cooking oil
- 1 tbsp rosewater
- 1 tbsp lemon juice
- 2 teaspoons ground cardamom
- 1⁄2 teaspoon salt
- Pinch ground red pepper
- 1⁄2 cup blanched almonds
- Fresh coriander or cilantro
- Roast Spiced Cornish Hens
Directions :
- In a bowl combine honey, oil, rosewater, lemon juice, cardamom, salt, and ground red pepper.
- Line a baking sheet with a piece of foil large enough to wrap around the hens. Place hens on foil. Pour a little honey mixture into the cavity of each hen. Pour the remaining honey mixture over the hens and sprinkle with almonds.
- Bring foil up around hens and seal by folding over the edges. Bake in a 350 oven for 1 hour. Unwrap and spoon cooking juices over hens. Roast, uncovered, for 30 minutes more or till golden brown, tender, and basting with cooking juices occasionally.
- Let stand for 5 minutes. Serve with almonds and garnish with fresh coriander or cilantro.
