Barbecued Chicken Breasts with Lime-Ginger Butter

Ingredients :
- ¾ cup butter or margarine
- 1 teaspoon finely shredded lime peel
- 2 tbsp lime juice
- 2 teaspoons grated ginger root
- 1 green onion, finely chopped
- ½ cup parsley, finely chopped
- 1/3 cup butter or margarine
- 6 boneless skinless chicken breasts
- All-purpose flour
Directions :
- In a bowl beat ¾ cup butter or margarine with an electric mixer till fluffy. Add lime peel, lime juice, ginger root, and green onion. Beat till well combined.
- Shape butter mixture into a 4-inch log. Wrap in waxed paper and chill for 30 minutes. Roll butter log in chopped parsley. Rewrap and chill until serving time.
- Dust chicken lightly with flour. Grill on an oiled grill rack directly over medium coals for 15-20 minutes or till chicken is tender and no longer pink, turning once.
- Cut chilled butter log into ¼-inch slices. Place 2 butter slices on each chicken breast and serve. The butter will melt to form a sauce.
